For those of you who are thinking it, no this is not raw bacon. This is a delicious rolled bacon and cheese log that resembles a sushi roll when finished. For this recipe we at The Horde recommend that you use nice thick bacon to form a good foundation. We also suggest that you use a very flavorful cheese, such as sharp cheddar, so that the bacon flavor does not overwhelm the cheese. Bake the bacon longer than you think you need to. The top may look done, but it may not be fully cooked underneath. A high walled baking sheet will help you to drain the grease after baking.
